Überwirklichkeit
UPDATED Film isn’t reality. Well, no surprises there. Moment by moment, reality is quite boring. In life, we edit reality in our heads, to make it more interesting. So if we were just to film reality, in real time, it wouldn’t be very interesting [see home movies].
To make a film, whether it’s a documentary or a fiction, it’s necessary to grab the reality of the subject and take it apart into a series of moments which can then be put back together again [in post-production] to create something that looks like reality. In the case of the documentary it's often done retrospectively.
This is the key, it must look like reality – and that’s the tricky bit, it takes a lot of un-picking, working out and putting back together in the right order. To look right, intended and real it’s got to be more than reality, super real, or, as they say in Bavaria – Überwirklichkeit.

the "boring" referred to the recording of reality in actual time
